Holiday Egg, Carrots & Potato Salad Recipe

Christmas eve dinner with the family is the best at my home.  We get together, listen to holiday music and watch xmas movies.  My favorite movie is "It's a Wonderful Life".  I love food that is colorful and one of my favorite dishes that I made this holiday was eggs, carrot and potato salad. My hubby loves.  This salad is delicious and goes great with a side of chicken, pasta, turkey well you get the drift.  Mmmmm good.

Ingredients:

  • 3 to 4 potatoes, cooked until just tender, cubed, cooled
  • 4 boiled eggs, cooled, cubed chopped
  • 1/4 a cup chopped red onion
  • 3 to 4 carrots cooled, cubed chopped
  • green peas optional
Dressing:
  • 3/4 cup mayonnaise (a little more or less, as desired)
  • salt and pepper to taste

Preparation:

Boil the eggs, potato and carrots in a pot. I then add a pinch of salt into the water.  Then drain the water and cut up the eggs, potato and carrots into cubes,  Combine potatoes, egg, onions, and/or peas. Stir in mayonnaise and pepper to taste. (Stir the mayonnaise until you have the flavor and consistency you like.)

Total Prep Time: 25 Minutes
