#Recipe Holiday Potato Salad with Egg & Carrots

Christmas eve dinner with the family is the best at my home.  We get together, listen to holiday music and watch xmas movies.  My favorite movie is "It's a Wonderful Life".  I love food that is colorful and one of my favorite dishes that I made this holiday was eggs, carrot and potato salad. My hubby loves.  This salad is delicious and goes great with a side of chicken, pasta, turkey well you get the drift.  Mmmmm good.


Ingredients:

  • 3 to 4 potatoes, cooked until just tender, cubed and cooled
  • 4 boiled eggs, cooled, cubed chopped
  • 1/4 a cup chopped red onion
  • 3 to 4 carrots cooled, cubed chopped
  • green peas optional
Dressing:
  • 3/4 cup mayonnaise (a little more or less, as desired)
  • salt and pepper to taste

Preparation:

Boil the eggs, potato and carrots in a pot. I then add a pinch of salt into the water.  Then drain the water and cut up the eggs, potato and carrots into cubes,  Combine potatoes, egg, onions, and/or peas. Stir in mayonnaise and pepper to taste. (Stir the mayonnaise until you have the flavor and consistency you like.)

Total Prep Time: 25 Minutes

Christmas in NYC

Nothing says its xmas like seeing the Rockefeller Christmas Tree light up.  Last year I took my son, Aidan, for the first time.  Seeing the awww from a child's eye is priceless.  Then comes the questions of, "How did they get the tree here?", to "How long did it take them to light it up?" well you get the drift of questions. 



I showed him several videos from the Today Show  to Youtube of how it all came to be.  Aidan was fascinated with the details.  After our trip to see the tree we walked down to Macy's on 34th Street to see Santa Claus.  He was so excited.  One of my favorite things to do is see all the window decorations, from Macy's, Bloomingdale's, Neiman Marcus and list goes on.

Macy's has another world set up when you go visit Santa.  It is amazing.  I love the train sets they had and decorations.  Unfortunately, I do not have any pictures because he was 4 yr old at the time and got scared of Santa.  He couldn't even talk to him to ask what he wanted for xmas.  The funny thing is that right after we left he said that he was  not afraid of him.  I laughed all the way to the train station.  He said he wanted to go back and this time around he wouldn't be afraid of him.  From Aidan's perspective he was not able to tell Santa what he wanted, so how was he to know.  I told him to write him a letter, but Aidan said that he didn't know that he was learning in school how to write.  So I told Aidan to cut out pictures of what he wanted and we would go and mail it in the Santa Mailbox at Macy's so Santa was sure to know what he wanted.  

This year we will go to see the tree with our new addition to the family, Ashley. Aidan really wants to go see Santa at Macy's again because he wants to take his baby sister to meet him and let him know what Ashley wants. Since he is the big brother that is his job he says.  Oh gotta love these innocent years as I know they will not last but it is so sweet to see Xmas from the eyes of babes.

Simple and Elegant Christmas Decorations

My husband and I decided this year that we would do simple decorations on our tree. By simple, I only use my tree with lights, ornaments, and xmas skirt. My favorite colors are pink and silver and shopping through the dollar store I was able to find pink ornaments and a xmas skirt for the tree.

Clean up is a breezy. I keep all the boxes for the decorations in the xmas tree box and put it in the closet. Then when its time to store everything again, I am able to put all the ornaments and the tree back in there own boxes. Keeping things simple helps when we have to package everything up again for storage for next year.  Its an easy open box set it up and then break it down and put it away.
