#Recipe Flan with Pineapples

Now that Thanksgiving is around the corner, a flan can used for any occasion.   It is sooooo yummy, your guest will be asking for 2nd and 3rds.  Here is what you will need:


1 can of Coconut Milk
2 cups heavy cream
6 large eggs
1/2 cup sugar
1½ tsp.Vanilla Extract
Pinch of salt
Pinch of Rum (I like Barcardi White Rum)

1/3 cup water
1 cup sugar
½ tsp. lemon juice
minced of pineapple


Caramel-topped custard:
1.In saucepan, combine the water, sugar, minced pineapple and lemon juice over medium heat. Mix until the sugar dissolves. Stop cooking when liquid turns thickens and changes color. Immediately pour the syrup into a  medium deep dish, covering the top to pour flan mixture inside.

1.Preheat oven to 350°F.
2.In a pan on medium heat pou coconut milk and cream. Boil 3 quarts of water.
3.In a large bowl, gently whisk eggs, sugar, vanilla and salt. Whisk warm coconut milk and cream into egg mixture. Then mix in a pinch of Rum to kill the smell of the eggs. When the mixture is creamy, pour it through a fine strainer.
4.Pour Flan mixture into a the dish you pour the caramel-topped custard. Then place the dish into another pan halfway up with hot water. Cover loosely with aluminum foil to create a water bath and place in oven. Cook the dish for approximately 1 to 1 hr 1/2. When knife inserted in center of Flan comes out clean, it's done.
5.Remove Flan to cool. Refrigerate for several hours or overnight.
6.To loosen Flan from dish, slide knife around mold. Place your plate on top and flip upside down. Shake gently if Flan does not release. Then top off with the caramel-topped custard with pieces of pineapple that is inside and top off with a cherry.  (NOTE IF YOU DO NOT WANT TO PLACE THE CARAMEL-TOPPED CUSTARD INSIDE THE PAN BEFORE BAKING IT, PUT IT TO THE SIDE AND AFTER THE FLAN IS COOK THEN POUR IT ON TOP).
